Terrific Tuesday!!!!!!!!

*sigh*
I just love tuesdays now. really I truly do. Knowing my blog has some sort of scheduled thingy each week makes me feel like it's more than just my quiet place to ramble. Like it is a teeny bit like all those real big fancy shmancy blogs out there. You know.. the ones that have sponsors and thousands of followers??? (I suppose when I start doing giveaways and having sponsors I might just faint!) -on a side note....do you think it sad that I got all giddy this morning
about having 15 followers?- thank you readers =] Besides all that I love having an excuse to blabber endlessly on about something I find absolutely Terrific!!!
annnyyy excuse to talk, eh?
Ah yes, The Frighteningly GOOD third day of the week has ARRIVED! Alrighty, so we all know Christmas is RIGHT around the corner. I AM SO EXCITED! *ahem* if you have just now realized how close Christmas is...I am reaching out to give you a virtual slap. hello?!?!
I do believe one of my favorite thing about this time of year is baking cookies.
COOKIES!
ahh I always knew me and the cookie monster had a connection when i was little. Cookies shall be the death of me, when they are a little crispy on the outside but nice and chewy on the inside. Mmmmmmm. I will eat a truck load. and baking them>??? gahhhh
I end up having way too much fun, making a huge mess, and eating half the dough. But Christmas cookie baking time is THE BEST. We are about to start planning our cookie baking day in my household. and that's when I remembered my special recipe I do every year.
It's from an old Christmas Cookie Book. you can't Google it OR Bing it. you may find a similar recipe, but believe me. it's NOT the same. I've never ever shared this with anyone outside my family.
It is my gift to you readers. =]

*that picture is the closest picture I could find to the real thing, since I don't have one myself, just visualize that cookie with ribbons of melted peppermint throughout.*

Mint Chocolate Snaps

1(6 ounce) package semisweet chocolate morsels. Half cup plus one and half tbsp shortening, 3/4 cup sugar, 1 egg, 1/4 cup light corn syrup, 1 teaspoon peppermint extract , 1 teaspoon vanilla extract, 2cups all purpose flour, 1 teaspoon baking soda, 1/4 teaspoon salt, 1/2 cup to 1 cup crushed peppermint candy, additional sugar

Melt chocolate morsels in top of double boiler over simmering water. Cream shortening in a large mixing bowl: gradually add 3/4 cup sugar, beating until light and fluffy. Add melted chocolate, beating well. Add egg, syrup, and flavorings: beat well. Combine flour, baking soda, and salt in a large mixing bowl: stir in chocolate mixture and crushed peppermint candy. Shape dough into 1-inch balls, and roll in additional sugar: place 2 inches apart on ungreased cookie sheets. Bake at 350* degrees for 12-15 minutes. Cool on cookies sheets for 5 minutes: remove to wire racks. Store in airtight containers. Yields: about 7 dozen

Hey Rachel,
I love your "Terrific Tuesday" posts. :) One of the reasons being that I work babysitting a little boy Mon-Thurs every week and by Tuesday I'm already tired of it and ready for the weekend! Then I get home and read your post and it gets me all excited that it's still Tuesday! lol :)

Oh, and no, I don't think it's silly to be excited over 15 followers. :) That's great! And that's sweet that you decided to share your special Christmas cookie recipe with us all. ;) I just might have to try them soon... with Christmas just around the corner!!

Blessings,
~Taylor
