oh, frighteningly good third day of the week, how I've missed drowning in your terrific-ness.
Busy ickyness was out to get me I tell ya, and especially on Tuesdays.As Stephanie would say from the show Full House. " How RUDE!"
Why?! Well, perhaps it's because I only have 2 weeks of the semester left
* squeals, faints, cries,* and as Usher would say in his latest song..... ( ok, dont judge me, I'm not a gaga Usher fan, ok?) "It feels so good to be back!"
ahhhhhhh. I have missed soaking up this wonderful made-up excuse to blab about Terrific things. Now don't forget, it is after all Tuesday, which means you HAVE to take the time to be Terrific, think of Terrific, anything Terrific people!!! even if it involves brushing your teeth in a Terrific way, DO IT! Take time to think to yourself what makes this day so Terrific for you, even if it's the fact that you punched you snooze button more then once and still made it to class on time. Ok, so today's TERRIFIC item is food .again.
ha ha ha ha. I can't help it. I love my food, and when I'm hungry that's all I have on the brain.
So therefore, I blog about it. *grins* You all know how much I LOVE LOVE LOVE to bake. Cookies being one of my top favs ( tying in with cupcakes, muffins, and pie)
I mean, seriously. It's therapeutic, tasty, fun, a good way to procrastinate, filling, sweet, delightful. It is extremely and incredibly Euphoric.
Happy happy happy. I feel sad for those who say they can't bake, because it really is super easy and boy oh boy are they missing out on benefits!! I mean, HELLO! if you are the baker, you get the dough, literally. homemade batter/dough is oooh so Yumm-O.
So today I came home after class( finally!! I was house sitting for a week and missed my bed) and had. to. bake. and we didn't have all the ingredients for a certain cookie recipe. so I made one up ( I tweaked up a chocolate chip bag recipe) and honestly, I don't mean to brag.
but oooh my goodness they turned out to be so moist, chewy and good!!! I don't have a name yet...( any suggestions?) So right now I call this recipe...
2 and 1/4 cups all purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 stick butter, softened
1/2 cup Canola oil ( I used Smart Balance Omega)
1 cup firmly packed brown sugar
1/2 cup sugar ( I used organic sugar)
2 eggs
2 tablespoons Peanut Butter
2 teaspoons Vanilla Extract
about 1/4 bag-1/2 (12 ounce bag) of Jumbo semi-sweet chocolate chips
a sprinkle of milk chocolate chips.
1/2 cup? ( however much you prefer) of chopped/shaved vanilla flavored Almond Bark.
Preheat oven to 375, then combine flour, baking soda and salt; set aside.
mix butter, oil, and sugars in large bowl until creamy. Add eggs, peanut butter, and vanilla mixing well. Gradually add flour mixture , mixing well. Stir in chocolate and almond bark.
roll dough into any size balls you prefer and place on ungreased baking sheet ( not too close!)
Bake for 10 minute and enjoy!!!
